CHEESE-FILLED CANNELLONI
Ingredients:
1 Package of Manicotti or Cannelloni
1 Lb of grated RICA Edam Cheese
4 Package of spinach cooked and ground
2 Spoons of RICA butter
1 Chopped white onion
1/2 Teaspoon of salt
Preparation:
Boil the cannelloni until they are al dente. Remove from the stove,
drain the hot water and then ad some cold water; drain them. Sauté
the onion with some RICA Butter; add the spinach and the salt. Lower
the heat and mix together with the RICA Edam Cheese. Fill the cannelloni
with the cheese filling and place in a serving pan. Pour tomato
or Bolognese sauce over them. Put in the oven and bake until the
sauce is boiling.

LASAGNA

Ingredients:
1 Lb of grated RICA Mozzarella Cheese
1 package of Lasagna noodles
1 Onion, chopped
1 Green pepper, chopped
3 Garlic cloves
1/4 Cup of oil
1 Lb of ground beef
1 Can of seasoned tomato sauce
5 Spoons of tomato sauce
1 Tbsp of oregano
2 Teaspoon of salt
1 Teaspoon of sugar
1 Laurel leaf
2 Cups of Alfredo sauce with medium consistency
Preparation:
Boil the lasagna strips as usual; drain and set aside. Sauté
the onion, pepper and the garlic until it takes a transparent look;
pour in the meat and mix well so it doesn’t forms any lumps
and it breaks down into pieces. Add the can of seasoned tomato sauce
plus 5 measurements of water using the can in which it came; also
add the tomato sauce, the salt, the oregano, the sugar and the laurel
leaf and let it simmer until the meat is well cooked without letting
the sauce to dry itself. If it’s necessary you can add more
water. Check on the amounts of salt that it has.
In a big rectangular pan, pour some of the meat sauce and place
a layer of the pasta and some of the white sauce and the RICA Mozzarella
Cheese; then place another layer of the pasta and repeat the order
of placing the ingredients. The whole process ends pouring the meat
sauce, the Alfredo sauce and the RICA Mozzarella cheese on top of
the last layer. Place in the oven at 375° for 45 to 60 minutes.

CHEESE SAUCE

Ingredients:
1 Oz. RICA Butter
1/2 Tbsp of flour
1 Cup of RICA Milk
¼ Teaspoon of salt
1/8 Teaspoon of pepper
1 Package of RICA Melted Cheese
Preparation:
Melt the RICA Butter in a medium-size pan. Put the flour in the
pan and let it simmer for 1 minute while stirring constantly. Reduce
the heat and add the RICA milk, the salt and the pepper. Mix well
until it has a soft consistency. Put again back to the stove, stirring
constantly until it’s thick. Add the RICA melted cheese and
stir until everything is very well mixed. (Ideal to serve over pastas,
boiled potatoes, boiled vegetables, hard boiled eggs and as dip.)

HOMEMADE PIZZA

Ingredients for the dough:
4 Cups of flour
4 Teaspoons of baking powder
2 Teaspoons of salt
2/3 Cup of oil
1 1/3 Cups of Pasteurized Rica Milk
1 Lb of grated RICA Mozzarella Cheese.
Preparation:
Combine the flour, the baking powder and the salt. Merge the oil
with the milk and then add the dry ingredients. Mix. Extend the
dough over waxed paper with the help of a dough roller; the dough
should be thin. Place it in the pan where it’s going to be
baked. Pinch the dough with a fork.
On top of the dough place enough cheese, then the sauce and finally
again the cheese; sprinkle some crushed oregano on top. Other toppings
that can be added are: mushrooms, vegetables, sausages, etc.
Ingredients for the Sauce:
2 Tbsp of olive oil
1 Chopped white onion
1 chopped green pepper
2 pounded garlic cloves with two teaspoons of salt
1 Teaspoon of sugar
1/4 Teaspoon of oregano
3 Lbs of skinless and chopped ripped tomatoes
1 spoon of tomato sauce
Preparation:
Heat the oil in a big frying pan at medium heat. Add the onion,
pepper and garlic; sauté for 3 minutes at low heat. Add the
rest of the ingredients. Cook the sauce without covering occasionally
stirring for about an hour with a wooden spoon. The sauce should
be thick. Yields 2 medium pizzas.
