FRIED CHEESE PIELÉ

Ingredients:
1 Lb of flour
1 Stick of RICA Butter
1/2 Cup RICA Milk
2 Egg yolks
2 Teaspoons of salt
1 1/2 Lb of grated RICA Gouda Cheese
Preparation:
Mix the flour and the RICA Butter together with a fork, until is
like only crumbs. Mix the RICA Milk together with the egg yolks
and the salt little by little, if it’s necessary add an extra
1 or 2 spoonfuls of RICA Milk. Cover the dough and let it rest for
half an hour.
Shape the pielé and fill them with the grated RICA Gouda
Cheese. Fry in abundant oil.

CHEESE CAKE

Ingredients:
4 Packages of milk cookies (24 cookies)
1 stick of RICA Butter (4 oz.)
1/2 Teaspoon of cinnamon
3/4 Lb of RICA Cream Cheese
1 Can of undiluted evaporated milk
4 Spoons of sugar
1 Flavorless gelatin
1/2 Cup of water
Marmalade (preferably strawberry or cherry)
Preparation:
Grate the cookies and put them together with the butter and the
cinnamon until a paste is formed. Cover the bottom of the pan and
place it in the oven at 350º for approximately 15 minutes until
it’s firm. Let it cool.
Blend well the RICA Cream Cheese together with the milk and the
sugar for approximately 4 to 5 minutes.
Dissolve the gelatin in water on low heat and add the cream cheese
together with the milk and pour over the pan with the crust and
place it in the refrigerator for two hours or until it curds.

TROPICAL PIE

Ingredients for the dough:
5 Grated green bananas
2 Grated green plantain
4 Lbs of chopped malanga (cocoyam)
3 or 4 Cups of UHT Rica Milk
2/3 Cups of oil colored with Bijol
2 1/2 Teaspoons of salt
2 or 3 Spoons of bitter Seville or bergamot orange juice
Ingredients for the filling:
2 Lbs of grated RICA Cheddar Cheese
1/3 Cup of olive oil
1/2 Lb of raw ham cut into small squares
1 Lb of white onion chopped small
3 Cloves of garlic pounded together with 1 ½ teaspoons of
salt
3 Chopped Bell peppers
1 Lb Carrots chopped into squares
1 3/4 Cups of small shopped celery
1 Package of chopped leek
3 Packages of chopped coriander
3 Spoons of soy sauce
Dough preparation:
Add the juice of the bitter orange to the green bananas and the
plantain while you’re grating; set aside. Blend the cocoyam
with the milk little by little, adding pieces of plantain and the
green bananas so it’s a softer consistency. Add the salt and
the oil. Mix everything, check on the salt and make the pies, filling
them with the following cheese and vegetable filling:
Filling:
Sauté the ham in some oil, then add the oil onion, garlic
and pepper; let it simmer; add the rest of the ingredients except
the cheese. Don’t let it over cook.
Place two large spoonfuls of the dough on top of plantain leaves
that have already been cleaned and placed in boiling water for approximately
10 seconds. Extend this dough, placing it as thin as it can be shaping
it square. On the top part place the filling and a spoonful of cheese
on top it. Fold the pie (using the plantain leaf) in a way that
the edges are together. Fold the outsides edges towards the inside
and tie them together with a string not tying them to strong so
it doesn’t loose its square shape. Place the pies in a pot
and add water. Add some salt to the water and boil for half hour.

CHEESE AND MUSHROOM PIE

Ingredients:
1 cup of crushed Soda crackers
2 Oz. of RICA Butter
Filling:
1 Oz. of RICA Butter
1 1/2 Cups of chopped white onion
1 Small can of sliced mushrooms
3 Eggs
3/4 Lbs of thinly grated RICA Samsoe Cheese
1Teaspoon of salt
1/4 Teaspoon of pepper
1/2 Cup of hot RICA UHT Milk
Preparation:
The crackers should be joined with the butter until they’re
crumbs. At the bottom of the pan ¾ of this mix are placed
using a spoon. Aside from this, sauté the mushrooms and the
onions with the butter. After they’ve been sautéed
they’re placed on top of the crackers. In a bowl batter the
eggs and add the rest of the ingredients.
Pour the mix on top of the onions and the mushrooms. Finally spread
the rest of the cracker mix on top. Bake at 350° for 40 or 45
minutes until it’s cooked and golden. Yields 8 servings.
CHEESE STICKS

Ingredients:
1 1/4 Lbs of Campesino RICA Cheese
2 Cups of flour
1 Teaspoon of baking powder
1/2 Teaspoon of salt
3 Oz. of RICA Butter
1 Egg yolk
1/3 Cup of UHT RICA Milk
Preparation:
Mix together the flour, the baking powder and the salt. Add the
butter using a fork, add the egg yolk with the milk little by little
and mix well. Let the dough sit for approximately half an hour.
Extend the dough until it’s thin and slice it into strips
of ½ inch wide. Completely wrap the already cut cheese into
small sticks using the dough and fry. Serve hot. Yields approximately
from 50 to 55 sticks.
Note: The dough should be placed one on top of
the other and then the cheese is placed on top of the last layer,
this is so the sticks have the same shape.

DAD’S CHEESE OMELET

Ingredients:
4 Eggs
1/4 Teaspoons of salt
A pinch of pepper
6 Tbsp of RICA Listamilk
1 Cup of grated Danish RICA Cheese
3 Tbsp of RICA Butter
Preparation:
Batter the eggs lightly. Add the salt, peppers, milk and the cheese.
Mix well. Melt half of the butter in a pan; pour half of the mix.
Cover and let it simmer until the bottom part of the omelet is lightly
golden and the top part has already been dried. Fold the omelet
and serve right away. You can add grated cheese on top of it if
you want. Repeat the process in order to make another one. Yields
two servings.
